What a year 2019 has been in the world of Wow Cake Company! By far the most exciting event was the arrival of my a new grand daughter, the amazing Poppy, in April!
In August we found new premises and our next arrival, Wow HQ, opened for business in the last few weeks.
And now our third exciting new arrival is finally here - our amazing Gluten-Free, Wheat-Free, Nut- Free, Egg-Free and Oat- Free All Purpose Baking Flour.
We had been looking at producing a good all purpose flour that could be used for cakes, biscuits and pastry but could also be used in the more formal structure of a wedding cake.
People ask why change something that is so successful? The answer to that is simple - we want to make it cleaner and better!
We wanted cleaner flour that was free from Gluten, Wheat, Nut, Egg and Oats. (Gluten free oats contain a protein that is similar to gluten and can be problematic to some coeliacs – me included!)
When setting out on this adventure we knew it would be an awesome task but we were determined and focussed. We contacted some very experienced and talented technologists in the gluten free world and engaged their assistance. We were ready to start!
To be honest it felt like an impossible task. It took us about eight months of hard work to get the blend right.
During this time I was test baking and results were not the best and I was beginning to lose heart - the cakes didn’t rise, then they did, they were too heavy, they were too dry and so it continued. In the end it was actually just small tweaks needed to complete the recipe but those tweaks ….!!
We now have a flour that can be used to make almost anything – cakes, biscuits (amazing ginger biscuits), pastry, pancakes, Yorkshire puddings and I’m working on more.
Has this put me off? Are there more projects in the pipeline? Well, you never know what’s next.
